Susan's Ranch Oatmeal Chocolate Chip Cookies

Ingredients

1/2 C. butter softened

1/4 C. vegetable oil

1 C. brown sugar

1/2 C. white sugar

1 egg

2 tsp. molasses

2 tsp. vanilla

1 C. whole wheat pastry flour

1/2 tsp. baking soda

1/4 tsp. salt

3 C. quick oats (not instant)

3/4 C. chocolate chips/chunks

Directions

1. In a large bowl, beat until light: butter, veg oil, brown sugar and white sugar.

2. Add and beat: egg, molasses and vanilla. Pre-heat the oven to 375F.

3. Mix flour, baking soda and salt, then add and beat.

4. Add and beat or mix in: oatmeal. This will be a stiff and somewhat crumbly dough.

5. Stir in: chocolate chips.

6. Measure heaping Tbs., 12 to a sheet and bake for 8.75 minutes.

7. Enjoy with milk!
